Turkey Thai Curry

Ingredients:

  • 1 t. olive oil

  • 1 red bell pepper, (organic preferred), deseeded and chopped

  • 1 yellow bell pepper, (organic preferred), deseeded and chopped

  • 2 cloves garlic, peeled and minced

  • 1 t. minced ginger

  • 1 t. lemongrass paste (optional)

  • 2 C. leftover sliced turkey

  • 2 T. red thai curry paste (or replace with Indian tikka paste if you don't want a hot curry)

  • 14 oz. can coconut milk (full fat)

  • 1 t. brown sugar

  • 1 t. fish sauce

  • Juice of 1 lime

  • Small bunch of cilantro, roughly torn
